It would be great if the database component could take a variable in the SQL field. Then SQL could be dynamically built.

Well, you can use a parameter for that. Parameters values are put into the SQL statement, so you could have your SQL statement like this:
{0}

And then enter a single parameter pointing to a variable containing the string that you need.
