    If you configure office hours on an inbound rule, you cannot change them. You have to delete and re-add them. Tested in Chrome and Edge.

    This same bug applies for Configure Office Hours under Timezone & Office Hours Settings.

    Actually this is the default behaviour, once you set a set of hours you can only delete them or add another set that does not overlap with the already configured one.
    moving this to general as this is not a feature request
