I use Server 2003 but that was because I thought I had to (long story). My personal opinion is that server 2003 is probably a little more stable but XP is still pretty stable. It probably doesn't matter and considering the different in cost (~$650 USD), Windows XP would be preferable.

I'd go with XP and reserve that license of 2003 Server for something that requires .

If you have a server 2003 use it! Server 2003 is more stable than xp. Windows Server is more supported by Microsoft about security issues.
XP works fine but occasionally I need to reboot it.
