Can someone please advise on how to configure for a client who is closed every second Friday and they want it go straight to voicemail on that day.
Is it possible and if so, what would be the steps to configure?

Only manual or CFA.

You can manually define the days as holidays and have the Call handling destinations to go to that voicemail.

Yes, when a department holiday is in progress the PBX will process the holiday routing for the call handling (Queues, Ring Groups, Digital Receptionists)
