Our SIPP provider for our PBX is EVE networks, on V20 I can no longer add/configure our trunk - has 3CX just decided to stop supporting this SIP provider?

We're on the EVE network and they were never a supported SIP Provider. You have to set it up as a generic SIP trunk in v20.

the option for generic just isnt there in V20, i can even import the XML i exported in V18

Use the add gateway button.

If you use v20 SMB there is no generic sip Trunk. Its only for self hosted or on premise.
