When using the MAC soft phone I dial a number without using a digit "1" before the 10 digit number. If I bring up the call history a "1" is prepended to the number and the call does not go through if I click on it to redial or right click and choose redial from the menus.

How can I get the soft phone to not prepend the "1" to the number on the call history?

You can add an outbound rule, in the PBX, to accommodate the redialled number with the leading 1.
You can also modify the incoming caller ID, striping off the 1, if desired. Of course this will affect all users.
