Salesforce call journaling from 3CX is putting the datetime in US format rather than Australian

Is there a way of fixing this ?

You're using the [DateTime] variable there, which converts the date & time to text, using the "short date pattern", according to the date & time formatting configuration of the operating system where 3CX is running. If this is not correct, you should adjust your operating system configuration to use the appropriate format.

Another way, if this is something that you don't know how to do, is using a different expression, so for example, instead of:
[DateTime]

You could use:
[[CallStartTimeLocal].ToString("dd/MM/yyyy HH:mm")]
