STUN Transition To SBC

We've had 3CX with various Yealink phones for a number of years and simply knew only what we needed to know regarding basic provisioning etc. Our environment is about 10 desk phones and 35 Wireless phones spread across 30+ VPNs. Picture a Home Office, Small Satellite Office and 35 retail stores. The stores use the wireless Yealink Handsets.

We had someone set this all up for us 3-4 years ago and as we've grown just followed the same instructions that were handed down. Phone provisioning was by STUN and we are fairly competent at the basics of adding extensions and provisioning phones - the wireless ones in particular. The desk phones are always a little more of a challenge with a lot of help from Google!

Now with the purchase of a T57W for an extension where I needed a wifi capable phone, I'm realizing that it's probably time that we transition to a hosted SBC instance - which seems pretty simple and straightforward. But before I start this process and install the SBC software on an "Always On" machine on our network, I have one major question:

If I install SBC initially to provision a single phone - is it going to kill all of our STUN phones out in the field or affect anything else about how things work at the moment? I don't mind us spending we week or so reprovisioning our remote store phones to SBC once I've figured it all out and played with it on this new phone - But I sure don't want 35 stores suddenly calling me saying "My Phone Doesn't Work!"

Installing an SBC on a site should not affect the STUN phones, so you can transition them over without affecting others.
 
Note the 57W can be a router phone, i.e., be its own SBC and for up to 9 others. (as long as they are all on the same network)

Also note the Yealink W phones, at least, need to be configured as router (a.k.a. direct connect) phones while plugged in, then wireless can be configured.
