3CX act like stun server ?

Do you know if 3CX provide stun server feature ?
If yes, on wich port the stun server listen ?

Hi,

Yes, 3CX provide STUN Server feature on default port 5060.

So, I had to insert the 3CX fqdn in the ip phone configuration like this:
3cx.mydomain.com:5060 ?
Or it's better to use ip address ?

If you auto-provision the phone, all fields will then be set correctly by 3CX.
You can use IP-addressort if you like, but there is no need for it.

Are you using a supported device or a non supported device? If you are using a supported device you only need to follow the provisioning guide for your model. The settings will be auto applied.
