We plan to get rid of wires and be less dependent on the provider and install a router with a SIM card.

Does anyone have any experience with this scenario?

P.S. 5g signal stable, router ZTE MS801a
 
The SIM card needs to have a fixed up address, by default mobile providers use cgnat networks where you cannot access your ip externally.

Remember the speed of the 5g is not constant and will change due to the amount of devices connected to the mobile cell

How many calls are you expecting to use the mobile connection ?

ISP will provide Statip IP for router, and max 3-5 calls expecting at the same time.

Also first 200 Gb will be on max speed, after the speed downs until 12 Mbps unlimited.
 
You say less dependant on the provider and then you go use another provider, there will always be points of failure.

You may want to consider sticking your PBX in the cloud and using an SBC to overcome any firewall issues you may encounter.
