Adding an additional disk to the Azure VM and changing the recording directory to that

Does anyone have some steps for this or a forum post they can point me at? My searching hasn't gotten me anywhere

You can change the location within 3CX (location is found under recordings). It's usualy set to something like /var/lib/3cxpbx/Instance1/Data/Recordings.

You would need to permanently mount the drive to be able to browse to the new / correct location.

Assuming this is a problem of running out of disk space, the alternative is to increase the size of your existing disk and expand your existing partition.
