Is it possible to do this or do we need to spin up EC2 on our own domain so we can add srv record?

@tcone2315 you mean if you can do this in a PBX which is hosted by 3CX or do this with a 3cx FQDN ?
Because for 3cx FQDN you can easily check this :

C:\>nslookup
set type=SRV
_sip._udp.example.3cx.us ( replace example.3cx.us with your FQDN )
_sip._tcp.example.3cx.us

@nikosT_3CX it is tricky. we host AWS account and I can ssh to Lightsail box, but Pbx FQDN is my3cx.com

Your question seemed to be concerned with the DNS portion of things. @nikosT_3CX gave you a way to check if the SRV records are in place with 3CX provided FQDNs, which they are. If you use your own FQDN then you handle your own DNS records. Where is the tricky part?
