Can someone confirm whether on a Hosted by 3cx instance (V18) can you use IP authenticated Gamma SIP Trunks.

You can use an ip based provider as soon is a 3CX Supported provider. Keep in mind that it is recommended to use a registration based as it is also mentioned below:
