Yes you can, simply use custom templates. But that's for the deskphones. Apps will still use the phonebook the same way.

In Settings > Templates, you can copy the supported templates as custom ones and then modify them as you need.

Then, edit the extension to replace the default template with the custom one (delete phone and readd.)

I wouldnt do this as it will mean you have to keep updating the templates. Better to tell the customer its not possible and handle the objections. It might be that they will go for another solution, in that case so be it.

Yes, I went with the "Cant do approach", but it would be nice if there was an option to have an external phone book server to allow this.
