Hello, on many of our customers we have emergency phones that absolutely must be connected h24.
We have to make sure of this, and are looking for a notification if one of the phones disconnects.
Concretely, we're looking for a log that says the phone is no longer connected. Or a service in the machine associated with the green or red dot next to a user.
We need something to monitor this.

There are email notifications you're able to toggle that will notify on service stop or fail.
 
There's no notification for a phone which is disconnected from the ipbx in those menus

Let me see if I can narrow down your request a little further.

I believe what we are talking about is whether a phone is "registered" to the PBX. Keep in mind that a phone will only periodically notify the PBX that it is still available by renegotiating a registered connection. How frequently the phone re-registers is not the same for every phone and can be configured to some extent.

The phone status is available in all of the 3CX clients, and I believe an email is possible too. However, if you need further more specific alerts when a phone is unregistered, then I think a custom solution will be needed.

The 3CX Call Control API does have registration events to which a programmer can subscribe. These events will let the programmer know whether the phone is registered to the PBX. That does not necessarily mean the phone is working 100% but it is a good indicator that it is likely functioning.

If that is what you are trying to achieve, the only solution that I can think of, is to create a Windows service or Linux daemon that monitors these registration events and then presents the phone status either via a web page, reports, etc.
 
that's exactly it, what I'm looking for is which log to look for?

If phone X hasn't sent a register in Y time, then it's considered disconnected and therefore sends a notification.

the question is: where are these logs stored? What form does it take?

I was certain there used to be an email notification if a phone unregistered, but I just checked and it appears that is no longer an email event you can subscribe to. Further, I am unaware of any logs that would be useful for tracking registration events. The only options are visually monitoring the phone status or writing a program that monitors the events using the 3CX Call Control API (or use our VoIPTools events API). I cannot think of any other option.
