number of SIP lines

When choosing phones for use with 3CX, does the number of "lines" have any meaning?

It depends what you are looking at, I think you are referring to SIP accounts.

These only matter if you are going to be registering the endpoint to more than one extension, PBX account and/or for fail-over purposes.

The only other time lines come into play is with SIP trunks/lines but I don't think you mean this.

For example, the Grandstream GXP1610 is marketed as a single line phone.
However the GXP1620 is a 2-line VoIP phone.

If a device has the capability of more than one line, then it generally mean that there are keys (buttons) available, that can be provisioned for additional extension (phone number) appearances, on the set. The keys can usually be used to provide other functions as well, not just another line appearance. A single line set is just that, only one extension (phone) number.
