Questiosn regarding the GDPR and web conferences

According to the GDPR I need to inform clients about what personal data is being processed by me, the reasons, the period of time this data is being kept, etc. etc. To be able to inform anyone I need to know what data a self-hosted instance saves - mostly I, as the admin, have full control over this except for when it comes to external services like the web conference.

I'm just wondering if there is any information out here about what data is transferred between:

• my self-hosted 3CX instance and the conference servers
• the participants and the conference servers
• the participants and my self-hosted 3CX instance
