What is the current preferred method of a mid - large deployment?

Multiple Raspberry Pi units? Set up in HA? Or set each phone as a router phone?

Is there a limit to how many router phones per site say 20, 50, 70? Will this cause issue?

This depends off how you want to proceed with the installation. The HA Cluster is a solution that also offers you the "failover" of the SBC but the router phones are more easy to handle as they only require the correct firmware. For the SBC if this will be on-premise you need to check the limitations from here as for the router phones that are listed here you also need to be aware that you must not use more than 10 phones behind each router phone.

We are using yealink t54 so this is possible.

I do not see any documentation for Raspberry Pi SBC anymore on that page. Is support for these being phased out?

We wish for a robust solution, would there be issue with making every phone a router phone on one LAN?

Do not want the issue of a single phone being disconnected and causing issue.

For the Raspberry Pi SBC installation you may also check documentation here however i wouldn't recommended to be used for more than 50 extensions and 10 BLF keys per device.
Using dedicated router phone for each extension does not have a limitation and of course it will help you here if you do not want to loose connection for multiple devices in case there is an issue with one phone.
