Is it possible to configure each of the two channels as a separate 3CX extension, so that I can see which DID applies to an incoming call, and place calls with the matching From value? If so, is there a guide somewhere about how to do this?

You would have to create a customized template, which is not supported by 3CX, and would have to be reverted back, if support were required. You can add a DID name (or number), to the caller ID to each DID, as a option.
