Hello,
What you need to do is to find out the range or ranges of IP addresses that your VOIP provider uses. Then, use static routing to route through the Ethernet interface allocated for the VPN.

The Ethernet interface should only have the IP address itself, subnet mask and DNS. No gateway. Add your persistent routes using the route add command. Check them all using the route print command.
