Hi!

how I maintain the 3cx control panel in DTMF Inband format for active Grandstream GPX1610 phones.
On the phone I can change but the provisioning changes every time you restart the device

It's pretty simple. You make changes in 3CX or you make changes in the phone but not both. So if you want the changes in the phone to stick, don't provisioning the phones.

To customize phone via provisioning, when those options are not provided by the management console, you will have to create custom templates. We do not recommend that, but if it is necessary you can do it regardless.

Just keep in mind that in case you face problems, we cannot provide support for modified templates and you will have to return the phones back to our default templates to resolve any issues caused by modifications. https://www.3cx.com/docs/custom-ip-phone-templates/#h.lbdvgcnoj4wf

On the other hand, you could look into ways that make in-band unnecessary if this is possible, as it is generally less reliable than RFC2833
