I'm a bit confused about the HA options available. There seems to be two scenarios, self hosted and cloud hosted.

In self hosted: Pro has an Active/Standby method where it does a backup/restore cycle between primary and secondary server. So you'll only loose data since the last backup/restore cycle.

Cloud hosted: I don't know what happens here. Is it still a backup/restore cycle or is it a real time mirroring?

If I'm running my 3CX on an eSXI server/cluster would VM mirroring work?

3cx failover is currently designed to provide basic telephony services if an active server should become unavailable a secondary server can be used until the primary is available again. At the moment there no up to date sync of data and the data is from last restore. If you have infrastructure in place to accommodate a HA cluster then this perfectly acceptable to be used instead.
