During the organization of the trunk.

When you specify the correct Codec and DTMF settings (for your provider) in the trunk settings, is that not sent?

and my provider requires a value of 101

The PBX will include the 101 value in the Media description value and will include an Media attribute: rtpmap=101 in the SDP. It is not mandatory however to include in the fmtp media attribute.
The fmtp media attribute is used to declare specific parameters for codecs. Since 101 does not have any specific parameters you do not need to include it in the fmtp media attribute.
