Removing a Deskphone Extension but keeping the softphone

Is it possible to remove and physical phone but keep the soft phone with the original extension and give the desk phone a new extension ?

Yes, definitely.
There is a difference in design of Extension settings between v.14 & v.15, but the idea is the same -- remove the MAC address and model of the phone from there. Afterwards better reset the phone to factory default and provision it to another extension.
You don't have to do anything in regards of softphone, unless you are using it into CTI mode. In this case you need to change this setting (into Extension settings) and sent reprovisioning email in order to use it as a softphone.
