SBC on Multi-Tenant

Scenario: We have a customer that rents temporary space a week at a time to multiple tenants. Can we use 1 SBC across all the tenants or does each tenant have to have it's own SBC? We are looking to switch our current multi-tenant system to 3CX for this project.

Each tenant will be on a different location so there will be needed different SBC's per location.
This will not be the case though if router phones are in use as each router phone will be a dedicated SBC.

Negative. In this case the tenants will be in the same set of buildings connected via fiber. The current system has all the phones on the same voice vlan but registered to their respective tenant. So the question is: if the tenants all share a network where the phones will be assigned, do they need an SBC for each tenant or can I use one SBC for all of them and and separate them by "customer"? Is there a trial version of this I can test out?

Will the devices also have router phone capabilities?

No, we have a standard issue phone VVX250. This is why we are exploring using an SBC.

If the phones are on the same network as the PBX then you don't even need an SBC. You only need the SBC if its on a different network. if you have the PBX in the cloud and the phones all in the same network at this building then one SBC is enough

The PBX is in a datacenter offsite.

One appropriately specced SBC should be enough, more if there is a very large number of phones. In this scenario the SBC is probably best to be a dedicated device and not a router phone that someone might unplug.
