Seems like there should be a way to see if the SBC(s) are connected to the 3cx pbx in the console (cloud hosted) but I don't see a way

No, this has been approved by the ideas site, but it is pending implementation as far as I can see.

If you are any good with the VERBOSE logging you can view these to tell if the SBC is connected, alternately plug in a phone and see if it appears in the "phones" list in 3CX.

As mentioned by @eddv123 the ability to see if the SBC is connected is currently not available. You will need to check the logs either of the tunnel or the SBC to determine that the SBC is connected to the PBX.
