Will an IP phone provision and function outside my LAN

I'm running an on-premise Debian based install of 3CX. I'm not requesting troubleshooting help but I'm asking if I can provision a supported phone that will sit outside my LAN?

I'm currently able to place calls between users right now but I'm only making use of the mobile app at this time.

Is this even possible? This phone would just sit at my son's house and would be the only device there.

you will be able to provision the supported phone that will be outside of the PBX LAN.
Phone can be registered via the STUN or SBC. See more at https://www.3cx.com/docs/manual/configuring-ip-phones/

Make sure that your firewall checker passes the test, as well as the HTTPS port, is open for the TCP. See more on ports that need to be open here: https://www.3cx.com/docs/manual/firewall-router-configuration/
Additionally, keep in mind that you can register more than 1 device on the same extension, so it can be your deskphone as well as a mobile client too.
