Best Fax Settings

What are opinion on best device and settings to use for using as a fax?

I need to have a desktop pickup the faxes and place it in a shared folder.

Get yourself a SIP provider who support fax and configure 3CX's fax service which will fax to email.
Then you can stick the PDF where you like.
