How secure are communications w/o a vpn?

Assume that you set up a SIP phone (Polycom, Grandstream, etc.) at a remote location and have it connect to 3CX over the internet without a VPN.

How secure is the connection between the phone and 3CX?

Can the data be intercepted, compromised, etc. ?

I always believed that all communication online thats not on SSL or VPN can be intercepted some way.
Why should it not apply to voip to? :wink:
