I have three sites joined by VPN in an SD-WAN with the 3CX server located in one site. I was looking at information on session border control and it looks like a good thing to have setup.
My question is if I retrospectively create a session border control can I then easily change phones and Dect bases over to use the session border control?
Also if the session border control goes down will the phones failover to the remote server or will they just stop working until it comes back up?

Since you use a VPN, the SBC is useless. You're better off using the VPN.

However, to answer your questions:
- Changing the phones to SBC is as easy as changing it in the Extension -> Phone Provisioning and then reprovisioning the phone.
- As for failover, there's the SBC HA for this (cluster pair of two SBC using a common virtual IP). On SBC config, no, the phone would not failover to Direct SIP.

Why is it useless when using a VPN? Would have thought firstly that if at a minimum the internet connection was lost (and VPN) then at least local extensions can call each other through the SBC

3CX SBC doesn't work like that. It has a minor benefit of saving some bandwidth if used in conjunction with a VPN but the primary benefit of the 3CX SBC is firewall traversal for multiple phones.

The SBC facilitates the connection to the PBX, but if the site loses connection to the PBX then the SBC will not operate independently (only the PBX is acting as the SIP server).

In your case it would not provide any benefits.
