Translations and overriding defaults

Hey everyone! I cant seem to find the official documentation on what languages are officially supported with the Live Chat plugin. I understand that there may be a handful that auto-translate based on a user's browser. If one of the languages out of the box is not supported, is there any way to custom define welcome/default messages such that we could apply our own translated terms? And can anyone 100% confirm what languages are supported?
