I just clicked on self-host for a key and that's step 4 as the picture shows.

is OVH no more supported? no visible docs nor for other generic VPS providers

I confirme, OVH is still available. I hosted many 3CX with the new PBX Express.

I finally found an earlier post on this, but for those like me who haven't done it for awhile, pbxexpress.3cx.com now redirects to customer.3cx.com. Log in, go to Keys, then scroll all the way to the right to find the Self Host button. That starts the wizard from which @cobaltit pasted the screen shot of providers.
